Hi: I’d have to say Indian. For many Indians, their religious observance forbids meat eating (though dairy is permitted.) Not all Indian food is hot or overly spicy. The cookbook ”The art of Indian vegetarian cooking” by Yamuna Devi has 500 vegetarian recipes. The Chinese also have several varieties of soy products which have meatlike textures such as ‘Mock Duck”, Fried Gluten and Beancurd sheets. Fried Tofu also has a firmer texture and can be used as a meat substitute. Try to make your own vegetarian dishes rather than take out – it’s cheaper in the long run and there isn’t as much grease in it.
